Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • ½ cup all-purpose flour
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 8 ounces mushrooms, sliced (button or cremini)
  • 2 cloves garlic, minced
  • 1 cup Marsala wine
  • 1 cup chicken broth
  • 1 tablespoon fresh parsley, chopped

For the Garlic Mashed Potatoes:

  • 4 large russet potatoes, peeled and cubed
  • 4 cloves garlic, peeled
  • ½ cup milk (or heavy cream for extra creaminess)
  • ¼ cup butter
  • Salt and pepper to taste
  • Fresh chives, chopped (optional, for garnish)

Instructions:

  1. Prepare the Chicken:
    • Season the chicken breasts with salt and pepper, then lightly coat with flour.
  2. Cook the Chicken:
    • Heat olive oil and butter in a large skillet over medium heat. Add chicken breasts and cook until golden brown on both sides, about 5-7 minutes per side. Set chicken aside.
  3. Make the Marsala Sauce:
    • In the same skillet, add mushrooms and garlic. Sauté until mushrooms are tender, about 5 minutes.
    • Pour in Marsala wine, scraping up any browned bits from the pan. Allow the wine to reduce by half, then add chicken broth and simmer for another 5 minutes.
    • Return chicken breasts to the skillet, simmering until sauce thickens slightly and the chicken is cooked through, about 10 minutes. Garnish with fresh parsley.
  4. Prepare the Mashed Potatoes:
    • Place potatoes and garlic cloves in a large pot of salted water. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15 minutes.
    • Drain and mash potatoes with butter and milk until smooth. Season with salt and pepper, and garnish with chives if desired.
  5. Serve:
