Ingredients:
- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- ½ cup all-purpose flour
- 2 tablespoons olive oil
- 2 tablespoons butter
- 8 ounces mushrooms, sliced (button or cremini)
- 2 cloves garlic, minced
- 1 cup Marsala wine
- 1 cup chicken broth
- 1 tablespoon fresh parsley, chopped
For the Garlic Mashed Potatoes:
- 4 large russet potatoes, peeled and cubed
- 4 cloves garlic, peeled
- ½ cup milk (or heavy cream for extra creaminess)
- ¼ cup butter
- Salt and pepper to taste
- Fresh chives, chopped (optional, for garnish)

Instructions:
- Prepare the Chicken:
- Season the chicken breasts with salt and pepper, then lightly coat with flour.
- Cook the Chicken:
- Heat olive oil and butter in a large skillet over medium heat. Add chicken breasts and cook until golden brown on both sides, about 5-7 minutes per side. Set chicken aside.
- Make the Marsala Sauce:
- In the same skillet, add mushrooms and garlic. Sauté until mushrooms are tender, about 5 minutes.
- Pour in Marsala wine, scraping up any browned bits from the pan. Allow the wine to reduce by half, then add chicken broth and simmer for another 5 minutes.
- Return chicken breasts to the skillet, simmering until sauce thickens slightly and the chicken is cooked through, about 10 minutes. Garnish with fresh parsley.
- Prepare the Mashed Potatoes:
- Place potatoes and garlic cloves in a large pot of salted water. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15 minutes.
- Drain and mash potatoes with butter and milk until smooth. Season with salt and pepper, and garnish with chives if desired.
- Serve:
- Plate the chicken with Marsala sauce alongside a generous serving of garlic mashed potatoes. Enjoy this delightful blend of creamy, savory, and earthy flavors!
