Creamy Lemon Risotto

Ingredients:

  • 1 1/2 cups Arborio rice
  • 1 small onion, finely chopped
  • 2 tablespoons olive oil
  • 1/2 cup dry white wine
  • 4 cups chicken or vegetable stock, kept warm
  • 1/2 cup freshly grated Parmesan cheese
  • 1/4 cup heavy cream
  • Juice and zest of 1 large lemon
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, finely chopped, for garnish

Instructions:

  1. Sauté the Onion:
    • Heat olive oil in a large saucepan over medium heat. Add the chopped onion and cook, stirring frequently, until softened but not browned, about 3 minutes.
  2. Toast the Rice:
    • Add the Arborio rice to the pan and stir for 2 minutes, allowing the grains to become slightly translucent around the edges. “This step is crucial for achieving the perfect texture,” Alessandra advises.
  3. Deglaze with Wine:
    • Pour in the white wine and cook, stirring, until it is mostly absorbed. “The wine adds depth and a subtle acidity that complements the lemon,” she explains.
  4. Add Stock Gradually:
    • Add one ladle of warm stock to the rice, stirring continuously. Once the liquid is nearly absorbed, add another ladle. Repeat this process until the rice is creamy and cooked al dente, about 18-20 minutes.
  5. Incorporate the Creaminess:
    • Stir in the Parmesan cheese, heavy cream, lemon juice, and zest. Season with salt and pepper to taste. Remove from heat and let rest for 2 minutes before serving.
  6. Garnish and Serve:
    • Spoon the risotto onto warm plates, garnish with fresh parsley, and serve immediately. “Serve it hot to enjoy the creamy texture and the brightness of the lemon,” Alessandra says.
