Ingredients:
- 4 cod fillets (6 ounces each)
- 1 cup all-purpose flour
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup cold beer (lager or ale works best)
- 4 large potatoes, cut into wedges
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- 1/2 cup mayonnaise
- 1 tablespoon chopped pickled jalapeños
- 1 teaspoon lemon juice
- Fresh parsley, chopped (for garnish)

Instructions:
- Prepare the Potato Wedges:
- Preheat your oven to 425°F (220°C).
- Toss the potato wedges with olive oil, chili powder, and a pinch of salt. Spread them on a baking sheet in a single layer.
- Bake for 25-30 minutes, flipping halfway, until golden brown and crispy.
- Make the Tartar Sauce:
- In a small bowl, mix mayonnaise, chopped jalapeños, and lemon juice. Set aside in the fridge until ready to serve.
- Prepare the Fish Batter:
- In a medium bowl, combine flour, smoked paprika, garlic powder, salt, and black pepper. Gradually whisk in the cold beer until smooth.
- Fry the Fish:
- Heat about 2 inches of oil in a deep pan or fryer to 375°F (190°C).
- Dip each cod fillet into the batter, letting any excess drip off, and gently place it in the hot oil.
- Fry for 3-4 minutes on each side until golden brown and crispy. Transfer to a paper towel-lined plate to drain.
- Serve:
- Arrange the crispy fish and potato wedges on a plate. Add a dollop of jalapeño tartar sauce and sprinkle with chopped parsley. Serve hot and enjoy!
Chef’s Note: “For an extra Southern kick, try adding a pinch of cayenne pepper to the batter. And don’t forget a cold beer to pair with this dish—it’s a match made in comfort food heaven!”
