Ingredients:

  • 4 cod fillets (6 ounces each)
  • 1 cup all-purpose flour
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cold beer (lager or ale works best)
  • 4 large potatoes, cut into wedges
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1/2 cup mayonnaise
  • 1 tablespoon chopped pickled jalapeños
  • 1 teaspoon lemon juice
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Prepare the Potato Wedges:
    • Preheat your oven to 425°F (220°C).
    • Toss the potato wedges with olive oil, chili powder, and a pinch of salt. Spread them on a baking sheet in a single layer.
    • Bake for 25-30 minutes, flipping halfway, until golden brown and crispy.
  2. Make the Tartar Sauce:
    • In a small bowl, mix mayonnaise, chopped jalapeños, and lemon juice. Set aside in the fridge until ready to serve.
  3. Prepare the Fish Batter:
    • In a medium bowl, combine flour, smoked paprika, garlic powder, salt, and black pepper. Gradually whisk in the cold beer until smooth.
  4. Fry the Fish:
    • Heat about 2 inches of oil in a deep pan or fryer to 375°F (190°C).
    • Dip each cod fillet into the batter, letting any excess drip off, and gently place it in the hot oil.
    • Fry for 3-4 minutes on each side until golden brown and crispy. Transfer to a paper towel-lined plate to drain.
  5. Serve:
    • Arrange the crispy fish and potato wedges on a plate. Add a dollop of jalapeño tartar sauce and sprinkle with chopped parsley. Serve hot and enjoy!
